Cranberry Walnut Muffins
Ingredients:
1/2 cup butter
1/3 cup brown sugar
1 egg
1 cup crushed pineapple OR applesauce
1/2 tsp vanilla extract (optional...or add your favorite spice)
2 cups white whole wheat flour (King Arthur mills this variety)
1 tablespoon baking powder
1 teaspoon salt
6 oz. fresh cranberries (1/2 the current bag size...didn't they used to be a whole pound???)
1/2 to 1 cup walnuts, chopped
Cream butter and sugar. Add egg and fruit, add dry ingredients, stir just till moistened. Fold in berries and nuts. Bake 375 degrees for about 18 minutes for muffins, 45-50 minutes for one loaf pan.
Make fat free: substitute an extra half-cup of crushed pineapple or applesauce for the stick of butter.
Sometimes I replace the sugar by processing 6-7 whole dates with the flour in my Vitamix.
