Tropical Fruit Cake

The only fruitcake I ever ate that wouldn't have been better utilized as a door stop.
TROPICAL FRUITCAKE
3 C. Brazil nuts
2 - 7-1/2 oz. pkg. pitted whole dates
1 C. drained Maraschino cherries
3/4 C. flour
3/4 C. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 tsp. vanilla extract
1 (20 oz.) can pineapple chunks, drained
Grease a loaf pan and line with waxed paper.
In large mixing bowl, mix nuts, dates, cherries and pineapple. Add sifted dry ingredients. Mix (with hands works well). Beat eggs & vanilla till frothy and mix in. Press hard into prepared loaf pan. Bake 1 hour 45 minutes at 300 degress. Cool before slicing.
